The meaning of quality is evolving. In consumer’s perception food quality remains relative; basically it now consists in the reputation of geographical name, but it is no longer sufficient. At the same time the meaning of quality includes also safety, production rules, other rules, or environment, values and different stakeholders etc. and it should be (in any case) correlated to agricultural policy (from COM, 2008, 641; reg. n. 73/2009; reg. n.639/2009).

Abstract
