Food losses and food waste have assumed such proportions that it can be regarded as a global problem that is reflected right along the food supply chain, from the field to the fork, which are generated in the production, distribution and consumption of food. In order to fight we need to understand “an et quantum”, where we lose food, how much and why. The essay examines the dynamics, outlining the importance of strategic regulation in the framework, and suggests to consider with attention the premises, the ratios and the consequences of this regulation as a method of intervent, whose potential has not been completely understood yet, at least in the national sphere.
