This PhD research project is aimed at the development, optimization and validation of rapid and solvent sparing analytical protocols enabling the determination of mineral oil hydrocarbons (MOH) in olive oils at very low levels, as required by the performance criteria established by the Joint Research Centre. These methods are then used to analyze the different matrices deriving from a sampling along the entire supply chain, in order to collect data on background levels and identify the potential sources of contamination.
