This paper examines the case of two οἰνοχειρισταί, ‛wine stewardsʼ, working for the famous Apion family. Through the analysis of the papyri containing orders and receipts, in which both oinocheiristai released their countersignature, it can be argued that they acquired a proper scribal education. During the textual analysis, readings and interpretation of previous editions were in some cases revised.
