Lipolytic activity of selected Micrococcaceae strains, isolated from Italian dry sausages, was evalued in vitro. Strains were Staphylococcus and Micrococcus spp. Lipolytic activity was studyed in broth with pork lard by evaluation of mono- and di-glycerides, free fatty acids. Activity depends on considered strain.

Abstract

Lipolytic activity of selected Micrococcaceae strains, isolated from Italian dry sausages, was evalued in vitro.
