The microbiological characteristics of soya buds, as product of IV range (partially processed), were studied. The amount of total microbial count was low and did not exceed the value of the limits of French Law (Dgccrf). No Salmonella spp., Listeria monocytogenes and E. coli were isolated in all the investigated samples. The shelflife of these products was within 9 days at 4°C, then the product appears yellow or brown, due to some oxidative reaction. So, according to the obtained data the soya buds here investigated have a good microbiological quality and do not represent a problem for human health.
