Nickel and copper contents of margarines on the italian market are being determined by using a new analytical procedure which includes chemical digestion heating by microwaves.Nickel and copper quantification is being carried out by means of atomic absorption spectrophotometry (AAS). With this method routine determination of trace metal contents can be carried out in media which are slow and difficult. Rate of recovery (98%) and the repeatability of the entire method, taking into account the quantitative amounts measured, give excellent results. Nickel and copper contents measured in margarine found on the market and tested in two distinct periods (15+15 samples), resulted as relatively low and in no way toxic for the human organism.
