A multivariate chemical-phisical data set of different olive cultivar was analysed using some chemiometric trchniques in order to obtain useful informations about correlation between chemical composition and suitability to a peculiar climatic area of Trieste Gulf.We used linear and non linear methods. since all variables data set not allow linear mrthods, so we applied the same techniques to a subgroup of variables and descriptive techniques to all variables (Fourier transformate, multidimensional acaling and icons).In order to compare the different cultivars responses during threeyears, we applied the Procruste rotation technique. We generally noticed "Bianchera" suitabikity as regards of other cultivars.
