A method of simulation of sterilisation process for packed Foods is shown. The simplicity of this method allows its application in laboratory for the individuation of the best parameters for industrial processes. A datalogger connected with a personal computer was used in order to acquire the time-temperature data and to transfer them to an electronic sheet. The monitoring system resulted effective in recording the time-temperature data also in industrial processing. The thermic diffusivity values, obtained From the mathematical elaboration of the experimental time-temperature data, were used to simulate with sufficient approximation the thermic effect on heat-treated products.
